The Tako Sashimi Knife is the Japanese version of the Western style carving knife. It is generally used for thicker slices of meat and is capable of cutting through small bones and skins. The fine edge is attained from the use of Molybdenum/Vanadium steel that is hardened at Rockwell C56-58 and holds its sharpness far longer than any other steel.
