No two knives are exactly the same and the blades are available in stainless or carbon steel for the ultimate sharpness. The oldest knife crafted in France, the Nontron originated in the Perigord because of the iron , the water, and an abundance of boxwood - a stable wood that is dense and lovely, creating the perfect handle material. French boxwood, cut only in this region of France is allowed to air-dry for at least five years before finishing, adding that much more to the value of these marvelous creations because of the patience and care given to the shaping of each knife.
